Bread pudding

Who makes this? I make this almost every other week as soon as we have left over bread that needs using up.

1)Break up about half a large loaf of stale bread, wet it with water and leave to soak until it totally breaks up and can be stirred.
2) Add a good handful of dried fruit, one beaten egg and two table spoons of brown sugar.
3) Put two tablespoons of butter in a cup, melt in microwave and stir in with bread mixture.
4) Stir in a generous amount of mixed spices, cinnamon, nutmeg, ginger, allspice etc
5) bake for around 40mins to 1 hour about 160'c until fully set and the top is brown chewy. Drizzle some jam, syrup or honey over and sprinkle with sugar.

I use warm whole milk instead of water and I add a tiny bit of caraway seeds and 1/4 tsp of cardamom along with the spices you listed.

@bhatjc just a bit like maybe 1/4 or 1/2 teaspoon for the whole recipe. It’s just to add a hint of flavor

@redredred Are your bread puddings more savory than sweet. What type of bread do you use?

No, they’re sweet but I like a caraway simply because it adds a bit of interest. I use challah when I can find it (usually Friday before the Jewish sabbath) or French batards and I sweeten the pudding with honey instead of sugar. @bhatjc
