It's too soft

[c=359E00]My cheesecake looks okay at the surface, but the inside is too soft[/c]

[c=359E00]maybe it's the mascarpone.. the high fat content make the cake too soft, or maybe my baking method, or lacking corn starch, or lacking eggs.. there so many possibilities 馃槕 [/c]

@YukikoAmagi There are many different recipes so that's the hard part. This one looks okay! I would personally put a little bit of lemon juice, salt and sugar into the shrimpmix so it tastes slightly tangy and sweet. Also whip some cream and put it in there as well so that it gets more fluffy. Do not use crayfish, only use shrimp. Skip the salmon unless it's a popular thing in your area. Put the fish roe into the actual shrimp mixture as well. Then it's a decent recipe 馃グ

@YukikoAmagi That should work, we want it to be a bit tangy either way so you'll just have to use less lemon juice

@YukikoAmagi Also be stingy with the shrimp because that's what is going to determine your profit in the end, shrimp is expensive where i live so a cake usually goes for 20-50 bucks if you buy it
