@Orlbe I've tried a lot of sourdough and have tried mixing styles like autolyse and Tangzhong to make whole wheat a little less dry. But, I've made all kinds, true New York style Jewish rye. It helps to use a brand of flour like King Arthur that guarantees its protein content for consistent bread making.
