I Want To Know What You Cooked Or Baked Today

Strawberry/blueberry/peach turnovers from today, used up some extra pie crust I had. Turned out quite tasty. Anyone else bake anything?

@Dewms Hmmm, chicken avocado turnovers could genuinely be pretty delicious, this pie dough works well for savory stuff too. And mango turnovers would definitely work. :D

@Dewms Also, worth noting that you should use apple cider vinegar for that dough if you can. Other vinegars should still give the same flakiness to the crust but the apple cider vinegar is very complementary to the pie flavors.

@Dewms Saaaame. Oh, and if you're going to do a savory pie, like meat pies or fish pies or whatever, substitute an additional tablespoon(or converted equivalent, you get the drill) of water for vinegar. Will make crust extra extra flaky and give a noticeably vinegary flavor that's amazing for pot pies and stuff.

@Dewms Also also, if you're going to do fruit pies, make sure to pick up some tapioca. Before you put in the filling, brush the crust with a beaten egg and then sprinkle a bit of tapioca across it. Not a solid layer, just a decent sprinkling across it, then pour in the filling and then put another sprinkling of tapioca on top. It will trap a lot of the moisture and keep the crust from getting soggy.

Then once you put the top crust on, if you want it to look extra delicious and good then brush the top of the pie with the egg as well and then before the last five or so minutes of baking take it out, sprinkle some cinnamon sugar or just coarse crystal sugar over the top and then put it back in and let it finish. It should partially melt into the top of the crust in the last few minutes and give you a bakery-style finish.

@Dewms And don't forget to put some bits of butter on top of your filling before you put the top crust on, I forget that all the time and then have to pry open the slits to slip it in or take the pie apart. Just like cut some butter into little pinky-nail sized cubes and spread several of them over the pie, they'll give a particularly pleasant texture and butteriness(big surprise, lol) to the top crust.
