		@Sonnet: You can't often see or smell salmonella or bacteria. If the meat looks bad its way too late, but no cook in any restaurant or wherever would think about using meat beyond expiration date. Its not even allowed to be in the fridge. Guess why

		I don't typically eat sausages even when the date hasn't past but if they still smell good and the color is fine then it should be fine. You usually can eat stuff a couple days after the use date still I think

		Yes, 
"use by " and "sell by" dates are subjective. Not federally mandated or enforced. But , rather, put on as a legal team for the companies see to place it on to cover themselves. But there is no industry standard. Mist tend to copy whomever the leader in that field is atm. So i would if they looked and smelled OK.
