@Sonnet: You can't often see or smell salmonella or bacteria. If the meat looks bad its way too late, but no cook in any restaurant or wherever would think about using meat beyond expiration date. Its not even allowed to be in the fridge. Guess why

Yes,
"use by " and "sell by" dates are subjective. Not federally mandated or enforced. But , rather, put on as a legal team for the companies see to place it on to cover themselves. But there is no industry standard. Mist tend to copy whomever the leader in that field is atm. So i would if they looked and smelled OK. Do the float test with eggs to see if they are OK.

@Elandra77: I know the egg thing. I'm still new to meat though. But today I learnt that not only would they smell funny, they also discolour

@Sonnet: an extra day is probably ok if they look and smell ok and the fridge is cold. Cook them well though.
