How would you feel about having chicken instead of a turkey for thanksgiving?

Have done it several times and it was good. Last two years was free-range rooster. A couple times we had Cornish game hens baked and stuffed with a fruit and nut mixture. Thinking about roasted split game hens brushed with olive oil, and sprinkled with salt and pepper. As simple as that sounds they were really delicious. So probably get 3 of them for us and do that. Roasted butternut squash with maple syrup, butter and cinnamon for a side with green beans and tapioca cheese rolls.

@cherokeepatti I made Cornish hens last year. It was for just my wife and me, so a whole turkey would have been crazy.

I do miss the days when you could find small turkeys in the supermarket, but that seems to be a thing of the past.

@DrWatson I’m at the point in my life that I don’t even want a small turkey. Don’t want leftovers and now it’s just the three of us. Those free range large roosters were so good that the boy kept getting more. And hardly had any leftovers after the meal was over. So I will make what we are hungry for and what we like.

One great way to go through leftovers is turkey-tomato-avocado sandwiches on toast. (Plus bacon if you like!)

@DrWatson I think I got burnt out on roast turkey the last couple of times I made a turkey dinner. And I always bought the smallest turkey that I could find.
