A LONG time ago, before I started noticing that my family was gaining a lot of weight, I used to make the most AWESOME baked stuffed pork chops. I would buy bone-in chops 3" thick. Then I would slit the meat portion in half with a sharp knife, and stuff the pockets with herbed stuffing mix. I would seal the chops with toothpicks, and then dip them respectively in flour, egg, and seasoned bread crumbs, and then fry them on all sides in hot oil to seal the chop. THEN I would bake them at 325 F for one hour, just until the meat was cooked. I served them with brown gravy.
