Actually, I've had egg noodle where the recipe literally says to put fried egg on top of the noodles w/ soup. It is quite good.
But mixing wise, you can put egg and stir it on instant ramen just when it starts boiling. You'd be surprised how different the taste would be.
Stir fry noodles...no, I haven't tried, I think. Scrambled egg on japchae not counted.
