Cook the spaghetti partially in water, finish it by frying it in butter or whatever spices. Add the sauce, then quickly cook the spinach until it begins to wilt. Finally turn off the heat and add any cheeses. Let it sit for a couple of minutes. That should melt the cheeses just right.

@DeWayfarer yeah I cooked the spaghetti separate... then added it to butter and garlic then spinach and then sprinkled cheese on top. Was actually very good. 😋
