I have four lamb shanks in the freezer :)

I need to look up and find a good recipe for them,i don't think i have ever cooked lamb shanks. lol

Slow roast...you can even do that in a crock pot. Rub the lamb all over with olive oil, then crush garlic cloves and rub the garlic all over the lamb...OR you can make tiny slits here and there and insert garlic cloves right into the meat. Once that is done, salt and pepper to taste, and for a crock pot roast, three or four sprigs of rosemary.

Brown them in a pan and then let them roast in the oven for a long time. Super tender and delicious. Lots of spices and lemon on them too!

Red wine and rosemary for sure
Slow cook in the oven. Half a bottle of good red wine. Cinnamon rubbed into the skin. Salt and rosemary
