I just made heart attack soup. Worth it.
So you bake up some potatoes let them cool. Fry up a bunch of bacon in small pieces then set that aside. In the bacon fat cook up a large onion finely diced until translucent. Add salt and pepper then add flour make a roux cook that for a bit. Add chicken stock cook until thick and bubbly. Add half and half cream check your salt and pepper levels to taste. Add cheese and sour cream then top with bacon pieces and green onion.
