Cherokee Casserole:
Low fat turkey (but you can use beef if you insist)....cook in pan until done as you
Boil 1 full cup of brown rice (use white rice if you must) in large pot.
Take the cooked meat (turkey or beef) and put into the large pot.
Add large container of portobello mushroom soup to pot.
Add 3 to 4 cans of rotel tomato's to the pot.
Heat at medium setting and stir occasionally to mix ingredients, until simmers.
Spoon out portion size as you choose on a plate, then add the cheese slices of your choice (I use American cheese slices) on top, and allow to melt a bit or stir in.
I like the 'hot' rotel cans....but you may prefer the medium or regular style.
