I baked chicken breasts 2 days ago, and yesterday I minced the chicken, and mixed it with chopped walnuts, strawberry flavored craisins, and chopped celery. The flavors blended overnight. I went light on the mayonnaise, and had two small chicken salad sandwiches for dinner.
