It tastes exactly like what we in sweden call potato buns. The reason why it's unnecessarily unhealthy is because the grated potatoes soaks up the oil like a sponge. The oil doesn't do it's job at this point, it just makes the final product fatter, so what do the homecooks do? They pour in more oil! Sure it tastes great, but there's a better way. We add flour and egg to our potato mixture. You wouldn't know it when eating it, but it keeps the oil from soaking into the bun and the oil stays on the surface. It was my favourite school food when I was a kid 🥰
The trick is to rinse off the potato starch and chill the potatoes. and heat the oil to near the smoke point. That keeps the oil from soaking in to the potatoes as much. Telltale sign, there is still oil in the pan when the cook is finished.
Just by reading this, I get the impression that your oil is not hot enough. It needs to be super hot and you need a low-smoke oil. The other thing to do, which is what I do, is to bake them in a hot oven until the outside Is cripy brown. Make sure the potatoes are rinsed and cooked a little to make them a little softer first and pat the excess moisture from them
