One thing I do that鈥檚 really easy and delicious is in a cast iron pan or baking dish I mix potatoes with peppers and onions and bake in the oven with chicken on top. The juice from the chicken flavors the potato mixture. You may have to cook the potatoes 10 more minutes while you let the chicken sit.
