One thing I do that’s really easy and delicious is in a cast iron pan or baking dish I mix potatoes with peppers and onions and bake in the oven with chicken on top. The juice from the chicken flavors the potato mixture. You may have to cook the potatoes 10 more minutes while you let the chicken sit.

Soups are easy to make. Here’s one I love, Pasta Fagioli.
Carton of Chicken broth
1/2 cup elbow macaroni
Can of whatever beans you like rinsed
1/3 cup Chopped onion
1/3 cup Chopped celery
1/3 cup Chopped carrot
Red pepper flakes
2-4 Chopped Garlic clove
Olive Oil or butter
A couple sausages. I use Italian
A couple fresh tomatoes diced
Dandelion Greens (you can leave off)
It’s about building flavor. Start with sautéing the onion, celery, carrot and garlic in olive oil or butter
Throw in a couple chopped sausages
Tomatoes or a few spoons of tomato sauce
Add beans (white beans, pinto, kidney, black beans whatever you like or have)
When veggies are soft pour in the chicken broth and the elbows. Add water if it seems too thick
Chop the dandelion greens and add. I like the look and the slight bitterness. Any greens work or none
Cook until pasta is done. Add salt to taste.
I put a little grated cheese on top and served with bread!

Here’s something you can make from pantry items and leftovers. You substitute and/or leave anything out and you’re fine
“Spaghetti with Sardines” sounds gross bit it’s delicious
1/2 package spaghetti
Can of sardines drained (canned tuna is a substitute)
Red pepper flake
Reserved Salted pasta water 1/2 cup
Olive oil
Fresh parsley chopped
Toasted Bread crumbs
Chopped garlic
A few cherry tomatoes or a splash of tomato sauce
So cook spaghetti until almost done. Reserve 1/2 cup salted pasta water
In a pan heat up olive oil, the garlic, tomatoes and red pepper flake but don’t burn the garlic
Add the sardines and stir
Add pasta and the pasta water and stir until water is gone and pasta is done
Add some bread crumbs for some crunch
Eat! You can use grated cheese instead of bread crumbs but the bread crumbs taste good it’s hard to screw up and you can substitute anything really.

@Lilymoon if you like Indian curries you’ll probably like that. We had been getting Butter Chicken and Cumin Rice at a tiny little Pakistani restaurant but when Covid hit we stopped going and it satisfied the cravings for it. Plus it’s a lot cheaper to make, you can make a lot more servings for the same price as one serving at that restaurant.
