@RedRogue Thanks: Had some frozen sausage links( thawed them), cut up a russet potato. Par boiled them, patted them dry. Put them in a plastic container, added a splash of olive oil, salt, pepper, diced onion and diced red and green pepper and a sprinkling of Paprika. Covered and shook and refrigerated.
In the AM pre heated oven to 350F added the spud and sausages on a foil lined pan - [image deleted]baked for 25 minutes. Last 5 minutes in a skillet with melted butter I added the eggs and over low heat until firmed up, not sticking and plated it all up.
