Have You Tried Bison?

I made soft tacos last night and used ground bison meat instead of ground beef. They were pretty good, had to cook the meat in some oil since it’s very lean.

I have never tried it before. I thought they were a protected species. I did buy a bottle of Californian wine recently from a company that supports the American Bison Society and was reading it off the label, so I may be wrong.

@Rhonda There are limited hunts for Bison, to manage heard size and avoid destruction of habitat. Bison are also raised and pastured much like cattle and sold commercially.

Not really Bison, but close, is a hybrid called Beefalo. A fertile hybrid between Bison (American Buffalo) and cattle. They are also raised for meat, as they are easier to manage.

@bowman81 thank you for explaining that. I have never heard of the Beefalo before, so googled them. I've only seen Bison at the zoo. Huge creatures!
