Have You Tried Bison?

@TexChik It is a lot like venison, if you overcook it it gets tough as shoeleather. It is best done no more than med/rare. I have had it in burgers and steaks and it is excellent. Not as good as Elk but almost.

@bowman81 we eat venison all the time . This was a bull and not a cow . It kept tearing down our fence that separated our property from the guy who owned it . After the third time when I called him asked me to shoot it … so I did . I called my hubby and we got it loaded and too the barn . All I wanted was t he tenderloin . Every one we called came and got some . It was a novelty

@Rhonda There are limited hunts for Bison, to manage heard size and avoid destruction of habitat. Bison are also raised and pastured much like cattle and sold commercially.

Not really Bison, but close, is a hybrid called Beefalo. A fertile hybrid between Bison (American Buffalo) and cattle. They are also raised for meat, as they are easier to manage.

@bowman81 thank you for explaining that. I have never heard of the Beefalo before, so googled them. I've only seen Bison at the zoo. Huge creatures!

@YMITheWayIM we ate it every last morsel. Didn’t have time to take photos. I didn’t tell the boy it was bison and he didn’t know the difference. It doesn’t taste gamey.

@YMITheWayIM guess what I made last night? Beef soft tacos…I think you’d like them. Flour tortillas are a lot like chappatis. You precook the ground meat with some chopped onions, add some spices (I like ginger, salt, pepper & some chili spice with lime juice). Heat all of the tortillas (you can also use corn tortillas), put a spoon full of meat on the tortillas, add chopped onions, tomatoes & lettuce, and salsa (homemade tomato-chili pepper-cilantro-salt, make it hot or mild as you like) and if you like sour cream or ranch dressing, and shredded cheese. This boy could eat them every night for dinner.

@RogueLoner I like to make bison burgers on the grill and also like bison hot dogs when I can find them (expensive, my local health food store stopped selling them when they got over $12 a pack)
