It doesn’t take two weeks for symptoms to show up, it was the day after quitting wheat for me and it felt like I was coming down with the flu, just lasted one day but I was eating the equivalent of two slices of bread a day when I went cold turkey.

@cherokeepatti I just ordered a bunch of the different types of flours he recommends in his cookbook. Flax, almond, potato, etc. I also checked the ingredients on fritos BBQ twists, and corn tortillas, etc, and they are all okay...no wheat...and they sell flax seed crackers in different flavors...pricey, though.

@4meAndyou you could make your own flaxseed crackers using flax meal and gluten free wheat. I make some “dumplings” using gluten-free flour, golden flax meal and milk, they were really good, would make good noodles too
