Dinner will be eggplant parmesan. I don't make it often. Its soooooo gooooood. There might not be any leftovers tonight.

I don't make anything fried that often. The eggplant gets fried tonight though. The sauce is made from scratch. None of the store bought crap. Not when I'm cooking.

@sexyalyssagurl: I haven't tried eggplant parmesan actually but I have checked out some recipes and I think I'll try making it some time.. lol it seems delish especially the baked eggplant ones..

I haven't tried baking it. I have done a baked breaded chicken recipe. If it's done right it almost tastes like it's fried.

@sexyalyssagurl: I've seen some from google and they baked the eggplants to a crisp. It sounded nice
