@sexyalyssagurl: I haven't tried eggplant parmesan actually but I have checked out some recipes and I think I'll try making it some time.. lol it seems delish especially the baked eggplant ones..

I haven't tried baking it. I have done a baked breaded chicken recipe. If it's done right it almost tastes like it's fried.
