I love having omelets for dinner. If there's any meat leftover from the nigh before, I'll fill the omelet with that. Sprinkled with a little cheese and a side of toast. I'm good for the night.

@silentwriter180: agreed...and I learned to never add a little water or milk to the beaten egg either...makes it impossible to flip without tearing

@booboo: Very true. I never understood that. My mother used to say that it made the eggs spread more easily in the pan. I never saw it though.

all the time!! When the kids were still home, they would get so excited to see me in the kitchen at dinnertime making scrambled eggs, pancakes, bacon, sausage, toast...they loved breakfast for dinner!!
