I cook my favourite vegs then put them in a baking dish with cheese sauce made with skimmed milk over the top, tben bake for 10/15 mins.it's yummy.

@Fernie: I'm a vegetable maniac..I love meat but try not to over indulge and I stay away from white bread it doesn't help my sugar levels.

@Primnproper: That's smart...I love veggies too. I got the big D ( diabetes) a few years ago and broke up with carbs...dammit

@Fernie: yes I'm an insulin dependant diabetic..I learnt carbs are a big no no..well not to often and too much, but bread just doesn't like me..and I went onto sweet potato from white which was just great.

@Primnproper: So far I am just taking pills. This damn disease is very unpredictable though and I may find myself taking insulin at some point. I do miss potatoes and crusty bread. I admire you for being careful. I saw the women in my family not take care of themselves and it took them all. Let's not go that way

@Fernie: exactly, they believe I was a childhood diabetic that slipped through the net..it took long time for me to get my levels right andit is very hard to maintain and still have an exciting relationship with food..unfortunately with tablet controlled you don't get much leeway but on insulin on special occasions we can have a slice of cake or dessert and adjust our insulin which helps..I have a great nurse that helped me a lot.

@Primnproper: WOW! You sort of lucked out even though you should have been diagnosed earlier...we both know the horrors of this disease for some people. I think I must have a mild case because I have never ...what is the term..spiked? I'm glad you have control now!!!

@Fernie: yes it's taken 8 yrs to get it levelled, finally..my partner has been a great help in that department..

@Primnproper: 8 years! That must have been very frustrating for you..and scary. Having a supportive partner is so important. My dear friend who struggled with Diabetes...very low numbers...is the one who alerted me to the fact that I had it...she was a great support system but passed away because she just could not get it under control.
