what would it be?
I'd pick the potato. In my opinion, you can do so many things with it. Mashed potato, baked potato, potato salad, french fries, potato chips, potato pancakes, dumplings, noodles, etc.
The list is only limited by your imagination.

@ViciDraco That's probably my second choice .. lot you can do with them .. but would miss combos with peppers

@PavlovsPuppy then I'd pick the tomato. Potatoes have a lot of variety as the core, but tomatoes make the perfect addition to many dishes. Life without Italian foods? No thank you.
