Excellent choice! With broccoli one can make... Fajita, add to margarita, with pasta or even rice, add to brunch or accompanying dish.

I do love a 🥔 and cheese graten. I remember I also used to make a cheese sauce and pour that over some baked potatoes as well!

Potatoes are good...I’d hate to forego the others though. Have been craving fries lately...cooked to a golden color.
Spinach. Green smoothies, omelettes, salads or just by itself.

@ViciDraco That's probably my second choice .. lot you can do with them .. but would miss combos with peppers

@PavlovsPuppy then I'd pick the tomato. Potatoes have a lot of variety as the core, but tomatoes make the perfect addition to many dishes. Life without Italian foods? No thank you.
