Smoking the Turkey

Any tips for smoking the turkey on a pellet grill?

Make sure to brine it. If it's a large bird you'll likely want to at least split it to make sure you're getting enough heat exposure to cook through. If really big you may even want to quarter it or piece it out.

Never used pellets but I assume the overall process won't be too dissimilar from wood chunk or chip. Keep the temp around 280 for at least 8 hours, you can go for shorter smoke but you'll need to raise the temp. I tend to prefer apple or cherry for turkey, personally, but hickory isn't a terrible choice either. That all comes down to personal preference.
@UndeadPrivateer I normally mix hickory Apple and cherry for turkey. 100% brine is as important as temp control.

Trager pellet grill. Cherry wood pellets.
@xinbaba heat source? I use charcoal/wood.

The pellets burn for the heat source. It starts with an electric igniter, but once the fire is burning the igniter shuts of and it's just the pellets.
@xinbaba gotcha.. Pay attention to your air flow. Both intake and exhaust.

General rule of thumb is if thevtemp is too low open up the vents... Too high do the reverse. Also keep an eye on your pellets as you'll need to add more throughout the cook.

I read that if you sing "Chicago" songs to the turkey while smoking, the turkey will come out more tender

@JarJarBoom I know a lot of Chicago songs, I will give it a go!
Brine it.

What's your heat source? Type of pellets?

I do this every year.
