@Skeleton Hmm. I have heard that beets have an earthy flavor that is sometimes hard to deal with. What you might want to do is find a really good recipe website, like epicurious or foodnetwork.com, and follow their recipes very carefully. I just looked at your beetroot soup on epicurious, and I don't think I would like it, because I don't like dill in my soups. Anyway, my best soups all start with boxes or cans of chicken, vegetable or beef stock, and one heaping teaspoon of "Better than Bouillon" which is a bouillon paste that comes in chicken, vegetable or beef flavors.
