I love Mexican food but can't eat cheese or any dairy. What Mexican food could I order at a restaurant with no cheese or dairy?

Actually the organ meats in it are quite tender if it is made well.

@rottenrobi Yep and tendons. Sometimes it has pig feet and/or beef tongue in it too. I don't care for the pig foot so much. I never really cared for pig feets.

@MethDozer "Well made"...I would actually eat it if I knew in advance...LOL!!! I mean, I eat sushi, I have eaten Carpaccio, (delish!) and I once ate a raw squid tentacle with a sucker on it to gross someone out...so I KNOW I could eat the guts....😍

@MethDozer I'm more a fan of pigs feet then a cow's stomach lining.
But it's all in the way it's prepared. I think anyway. 😜

@4meAndyou I never had it be bad. I just know that tendon and tripe can be chewy from having grown up eating both in other stuff. Like I have had spaghetti sauce with tripe that was chewy when it wasn't cooked right.

@MethDozer You should try pig necks!!! Disgusting! I have a friend who keeps giving them to me. You have to cook them in a crock pot for at least 6 hours and they are so fatty the fat stinks while they are cooking. You have to pour off the cook water at least once during the cooking. Then you have to pick the meat out of the necks and when you are done it is like very fatty pulled pork. I usually put it in a container and pour boiling water over it to bring all the fat to the top, refrigerate it overnight, and skim and drain the fat and rinse the pork again with hot water. Only then....can you mix it with BBQ sauce, heat and serve over rice.
