I love Mexican food but can't eat cheese or any dairy. What Mexican food could I order at a restaurant with no cheese or dairy?

I'm vegan and eat Mexican all the time. I just get normal things like tacos, enchiladas, etc. filled with veggies or potatoes and ask for them not to put anything with dairy in it.
