If you soak an egg in vinegar the eggshell will absorb the acid and break down, or dissolve. The calcium carbonate will become carbon dioxide gas, which will go into the air. What is left is the soft tissue that lined the inside of the eggshell. It will bounce!

There are a lot of ways... what are the specific rules? If you do it right, surrounding it with balloons can work. Or like a wireframe with rubber bands suspending the egg in the middle.

We did that in high school. We used old newspapers to cover the eggs up until it's thick enough to not easily break. And yes, make a parachute for it. Fortunately, nothing was broken when we did it.
