What is your opinion about the amount of reading that is, or should be, assigned in high school English classes in the U.S.?

Laughs. They don't assign enough or enough of the right things - classics for instance. Reading is a skill that needs to be perfected to excel at anything in life. I would be an advocate of a heavy reading schedule.
