Does the coronavirus symptoms come on really quick?

I think I just saw my maint guy at work like 3 days ago and he was fine, then suddenly today he's got a fever, sinus issues and feels like he might have pneumonia

Yes. You carry the virus for a while 2 days to 14 days then if symptoms are ever to appear they do come on rather quickly.
