Does the coronavirus symptoms come on really quick?
I think I just saw my maint guy at work like 3 days ago and he was fine, then suddenly today he's got a fever, sinus issues and feels like he might have pneumonia

Sure. Those infected typically exhibit symptoms a few hours there after exposure, others go days, weeks without. And some others are asymptomatic... so who really knows.
