Alexa has a few features that use voice to text, including:
On-device audio processing
When you say your wake word and have Do Not Send Voice Recordings turned on, an algorithm on your Echo device will transcribe your request into text.

This Alexa skill allows you to dictate text, which can then be emailed to yourself.

This app is designed to help people with limited mobility and dexterity use Alexa. It can be used in many settings, including hospitals, rehabilitation centers, and smart homes.
Voice Access
This feature allows you to speak commands to perform actions on your device, such as turning on the screen. You can also use Voice Access to type by voice by selecting a text field.
Alexa can also read and send SMS messages using only voice. You can also send voice messages using the Alexa app.
