If you don’t like shrimp (or brown rice) this will not appeal to you…

Suppose you have a lot of brown rice, and a lot of salad sized cooked shrimp, what would you add to those two ingredients to make a meal ?

For summer, a rice salad for 8 people:
(all ingredients chopped to pea size, except the prawns)
1 cup steamed brown rice,
1 lb cooked and peeled whole prawns,
1 bunch shallots/green onions,
1 red bell pepper,
1 yellow bell pepper,
1 small sweet (juicing) carrot,
2 sticks celery or fennel,
½ lb/500g tender young peas, raw,
1 cup black currants,
1 cup sliced black olives,
1 cup pickled capers,
2 cups finely ground fresh parsley,
1 clove finely crushed raw garlic,
1 tblspn each white wine vinegar, virgin olive oil & soy sauce
pepper to taste

for winter, a stir fry with your favourite ingredients.
