One that I prepare frequently is sweet peppers steamed in olive oil (lightly seasoned-mainly black pepper) with pecans or walnuts and either cherry or sliced tomatoes. After spooning it into a bowl I put cheese slices on top and let them melt.
It's a quick and delicious salad.

Yes. Swiss Cheese Fondue. And even though I am a true meat-eater, this is one of my favorite meals. 😋🧀
