I've got a boxful of beef tomatoes. What should I do with them ?

take what you dont want ot use rn and dice them, put about 2 cups worth in each ziplock freezer bag and freeze to use in soups or pasta later. (2 cups is approx a cans worth)

eta- make tomato soup and freeze in individual serving sizes. dry them for sundried tomatoes. make sauce...

to use fresh, crostini, bruschetta, pasta primavera... grilled cheese and tomato, pizza sauce..
