Is Chicken, quinoa, & a russet potato a good combinator for dinner???

Sorry I’m new to cooking and I’m trying to keep my weight down so I want to make sure I don’t take in too many carbs from my meal

Quinoa and a potato are too many carbs. Go with the quinoa and ditch the potato. Cook the quinoa is chicken broth to give it a bit of flavor.

I don’t like potato’s, make there’s lots of butter in them though
While potatoes are a vegetable, it's a starchy vegetable and considered a carb. Your grains are carbs as well. You could halve your servings so you can eat both or choose one. Add some vegetables. Vegetables have fiber and water and will keep you full but low in calories.
I would pick either the quinoa or the potato. Not both. Add a green vegetable.
