An iconic Indian sweet done my way


This sweet popular among Punjabi people is known as burfi (barfi). It is normally made using ghee, a bit of milk, milk powder and powdered sugar.

I altered the recipe and used heavy whipping cream (next to no sugar content) in place of the milk and milk powder. And I also used Splenda brand Stevia zero calorie icing sugar in place of the regular powdered sugar the original recipe called for. To thicken the mixture I gradually added sifted gluten-free flour at a ratio of 1 part for every 4 parts of milk.

With the changes I made, even though I doubled the recipe, I still ended up with approximately 66% less sugar than a single batch made with the original ingredients.

That looks good. Is it the same texture as fudge or is it more like cookies?
@SW-User more like fudge but little thicker.
In india they use more sugar and ghee.

@Sapio thanks for sharing. Even though I've been following a high protein, low carb meal plan I would like to try it one day. I know I couldn't make the yield that comes with following a recipe when all I'd want is a smaller serving size. Lol. I guess I can dream though, looking at beautiful pictures.
