Graphic design is typically creating designs for publication —think magazines, posters, websites and such. It's about communicating a message.

Graphic arts is a field about designing art to appear on a two-dimensional surface —a sheet of paper, a computer screen, the two-dimensional surface of a pot. There's a lot of overlap between graphic arts and graphic design, but graphic arts is more about the "arts" part.

Illustration is the art of drawing and painting a specific image, typically in two-dimensions. This can include line drawing, volumetric painting or other techniques.

Hope that helps.
