Isn't it kind of mind boggling that Russia was not able to issue all its mobilized troops in Ukraine enough AK47s?

The AK47 was designed to be easy to manufacture, and the design is completely Russian. I would have thought it's nothing for a factory to stamp out millions of them

Russia doesn't use the AK-47 any more, the Soviet Union replaced them in 1974. The current infantry rifle is the AK-74M. See https://www.army-technology.com/projects/ak-74m-assault-rifle-russian-army-military/

You can't just stamp out such things, not if you want them to work well. Don't forget that while Russia is a huge country it doesn't have a correspondingly huge population or manufacturing capability. And the military is corrupt so there is a lot of waste.
