How do scientists come to a consensus of what a chemical (e.g. a terpene) smells like?

Do they just get a bunch of professional smellers to get in a room and be like “ah yes I’m getting hints of basil, mango, and parsley”

from what i understand they get people fathers housewives old people people from all walks of life
they will pay them like $100 or so for the whole day.

they bring them in & just have them try new scents they take notes & they then figure out what to do next
