I don't know how I'd choose only one, this is akin to asking a parent to choose their favorite child.
Among birds, for instance, I pretty much love every bird I've ever heard, from Carolina wrens to belted kingfishers to pileated woodpeckers to ospreys domestically, plus kookaburras and more abroad. Corvids in particular mimicking humans is pretty amusing too. Virtually no "songbird" I can think of is not pleasing to the ear.
Frogs, cicadas, crickets, bees buzzing, dolphins. Goats are hilarious.
Kitties purring, trilling, chirruping and meowing are a wonderful sound too.
