@GirlSerendipity: It is very enriched heavy cream with a consistency, I would saay, of warm butter. There are places in the UK that serve "Cream teas" which I think is afternoon tea with clotted cream to spread on the scones. Wikipedia may have better info on this. This is the best I can do for now. Glad you asked.

thanks! i always thought the 'clotted' part was because the cream was left out too long or something, not done on purpose

Try condensed milk, very similar. Heat condensed milk and you really have a wonderful liquid.

Do you bake your own scones? I love them, after working in England for a while... But the bakeries here in the US vary on the taste. I've been looking for a GOOD recipe...
