I Love My Crockpot

Slow cooked meals are the most savory and satisfying dishes to eat when it's cold outside. I just made a Chicken taco soup that fits into my keto diet. 馃構 I put the ingredients in the pot last night and woke up to the most comforting and pleasant aroma.

I like slow cooking as well, but mainly for soups when I was veggie. Now I'm eating meat again, there's all kinds of things I want to try.

@GlassDog I [b]love[/b] trying out a new recipe. I'm considering going in the opposite direction of you...trying for a mostly plant based diet. Getting a little sick of meat, but I do love the juices they create for flavoring.

@Dionysus We should probably compare notes and I'll pass on my veggie recipes to you in exchange for your meaty ones. Most of the veggie stuff I made was entirely the opposite of slow cooked, though.

@GlassDog Oh yes, I would love that. I like my veggies more fresh mixed with light and spicy oils or dressings.

@Dionysus Me too in the summer. I'm an absolute sucker for a salad. And it's amazing how many of them work well with a bit of fruit too. Like apple in salad, or blackberry coulis as a dressing for green leaves. One of my favourites is chilled cous cous with pickled peppers and pickled cucumbers.

@GlassDog Ok, it appears as you have similar tastes to me. I like tasting contrasts. Do you have any spicy recipes as well?

@Dionysus We do have very similar tastes. I like my spicy food very, very much indeed. Thai salad is a favourite. You spiralise cucumber and shred carrot and onions (or julienne them), crush peanuts in a bag with a rolling pin. Mix all that together and for the dressing, oil, rice vinegar, salt, sugar, and then as many dried chilli flakes as you can take, and toss the salad through the dressing. I'm allergic to carrot so I substitute celeriac / endives / chicory or just substitute the carrot with cooked and chilled rice noodles.

I do some wild rice salads as well with beans and or actual fresh chillies.

@GlassDog Mouthwatering! You are on another level! I don't know how to spiralise or julienne, but I guess it's time I learn. Thank you for this! I will try it.

@Dionysus It's really easy. You either need a mandolin (watch your fingers, though), or you can buy a spiralising tool. They're really cheap (about 拢10) and you can used spiralised courgette/zucchini as a kind of spaghetti (courgetti). Very, very, very healthy indeed and delicious.
