Consider Wusthof Knives.
They're not cheap, but made of excellent steel,
they are balanced well and take sharpening well too.
I'd get the set that has an 8" kitchen knife and a paring knife.
Available many places, I got mine on Amazon.
MArineBob's suggestion is good too. I just wonder why the butcher would be willing to part witha good knife.
