Home grown and homemade slicled jalapenos

Someone brought into work to give away a whole bunch of jalapenos peppers from their vegetable garden. I enjoy sliced jalapenos on my food and making them fresh is always better than store bought.

I had about 20 large jalapenos and if you have them, wear them, gloves!! Trust me.

As you slice them up, bring to a boil in a sauce pan, 1 and 1/2 cup of white vinegar, and the same amount of water, along with 4 tablespoons of sugar, a little more if you like sweeter heat to your peppers and 2 tablespoons of kosher salt and a couple of peeled and mashed garlic cloves.

After vinegar mixture boils and sugar and salt is dissolved, turn off the heat and remove the pan from the heat and place Jalapenos into the mixture to soak for 20 minutes, transfer to jars and once cooled put in the refrigerator and enjoy as needed make some extra jars to give to neighbors and friends.

They are good if you like spicy hot food. I slice them fresh, removing the seeds, then add a little to lots of food I cook. Occasionally I've not worn gloves and rubbed my eye hours after cutting them and it stings for hours.

@Mouseinthehouse these ones are very spicey with the seeds in them. Yep, been there, done that without gloves, hours later it's still on your fingers, even after washing

@Laughoften try some, just a little, in spaghetti bolognaise, it gives it a nick kick. The seeds are the hottest part, so they get discarded.
