Do you think putting this on a cover letter would be sufficient?

"I can be best contacted at [email]".

Instead of a phone number?

I have my phone number on the application and my resume. We cannot use our personal phone at work so that is why I'd be best contacted by email I guess. So that I don't miss the phone call, and so that I can instead get all pertinent info by reading it once I'm on break...

Sometimes people miss that and go straight to the phone number , might be a good idea to highlight that

I can't think of a company out there that doesn't use e-mail. You should be fine.

What I would do is include both HOWEVER let them know your preference is email
