Seeking advice ....

Today was my 3rd failure at making enchiladas. The end result looked more like lasagna after it's been assaulted with a baseball bat.

How do you keep the corn tortillas intact when rolling them up? When I tried to roll them, they crumbled into 5 or 6 pieces. The more delicately I tried to handle them the more anxious they were to crumble.

Are you heating the tortillas in a little oil first? They need to be pliable and rolled while still pretty warm.

Put your tortillas in a non-stick pan or a pan with a little oil on med for about ten seconds more or less on each side. Then out your ingredients on them and roll them. They stay intact.

@sassypants for years I tried to bake enchiladas and had the same problem with them Crumbling. a friend taught me that trick and it works every time

@Jenny1234 It really does work. The secret is not leaving them too long. 10 seconds on each side is more than enough.

Thanks. I partly solved the problem later by using flour tortillas but really prefer corn.

Sounds like you're overcooking them in the first instance... They still need to be soft to roll without breaking...

Maybe make enchilada casserole instead, layer the tortillas and ingredients like lasagna. It’ll taste good.
try putting them in the microwave to warm them first so they become more pliable.

Apparently I wasn't softening them up nearly enough, and wasn't testing that they were soft enough before trying to make enchiladas. It's a lot easier to try to roll just a simple tortilla than one drenched in enchilada sauce plus.

Looking forward to trying again.

I tried sprinkling them with water and microwaving them for 10 seconds at a low setting. Still couldn't make one turn without them cracking.

I just bought them a few days ago. Had a "sell by" date of June 27th.

Did you try heating them up a bit before rolling them?
Sounds like they might be a bit dry .

You can remoisten them by placing wet paper towels between them and letting them sit for a while, or misting them with water from a spray bottle microwaving them for like 5 to 10 seconds each .
